Ayvalık Zeytinyağı is a registered designation of origin in Türkiye (Menşe Adı, registration no. 88, held by the Ayvalık Chamber of Commerce).
It covers extra virgin oil from the Ayvalık olive variety, pressed, filled and packed inside the area between the Madra Mountains and the Aegean, from Gömeç in the north to the Madra river in the south.
Our mill is in Ayvalık and our olives come from growers across this area. Because the designation also requires filling and packing inside it, it can go on qualifying oil we bottle and tin here. Bulk oil filled abroad is sold as extra virgin olive oil of Turkish origin.
Aromas named in the specificationBitterness comes from the early harvest, sweetness from ripe olives.
The Ayvalık variety grows on the hills around the town and across the bay. The harvest starts green in October and runs into winter; we press through the season and keep every lot apart.
Ask for samplesPick a bottle or a tin, type your brand and see it filled with the harvest you chose. It is a sketch for the conversation: label proofs and samples come before any run.
Organic and the Ayvalık designation go only on lots that qualify; we confirm per lot.

Crushed to a paste and slowly mixed so the oil can gather.
Oil separated from water and pulp by centrifuge, then cleared in the separator.

Mill in Ayvalık, export office in Istanbul. Want to taste before you order? We send samples from the lot, or set up a video call from the mill during the harvest.
Ask for samplesThe extra virgin grade has fixed chemical limits and a taste panel test. These are the EU limits; the analysis of the lot you buy comes with the quotation.
| Extra virgin olive oil | Limit |
|---|---|
| Free acidity (as oleic acid) | ≤ 0.8 % |
| Peroxide value | ≤ 20 meq O₂/kg |
| UV absorbance K232 | ≤ 2.50 |
| UV absorbance K270 | ≤ 0.22 |
| ΔK | ≤ 0.01 |
| Taste panel: defects / fruitiness | 0 / above 0 |
Tasting panels use a dark blue glass so colour cannot sway them. Green or gold tells you the harvest, not the grade.
Copies of certificates come with the quotation.
